Apple Pecan Pancakes

1 cup all-purpose flour
¾ cup half and half
1 egg, beaten
2 Tbsp. baking soda
2 Tbsp. vanilla extract
¼ cup sugar
¼ ground pecans (reserve some for garnish)
2 apples, small diced
¼ cup of brown sugar
1 Tbsp. cinnamon
1 Tbsp. ginger ground and dried
6 cloves
1 tsp. nutmeg
2 Tbsp. butter
20 oz. apple juice

In a medium size pan, add the butter, apples, cinnamon, ginger, cloves, pecans, brown sugar, and apple juice. Cook until apples are soft (approximately 8-14 minutes). In a medium size mixing bowl, add flour, salt, sugar, and baking soda; whisk to combine. Mix half and half, egg, vanilla, and add it to the flour mixture. Once apples are soft, fold them into the batter, reserving ¼ cup for garnish. Cook batter on griddle over medium high heat until pancakes are set. Garnish with apple mixture, toasted pecans, and butter, serve with Ohio proud maple syrup.
